Learn how to make traditional home made pasta with Moonacres Chef, Stephen Santucci.
With simple ingredients & basic equipment you’ll learn a range of pasta doughs & shapes, linked to regions in Italy and paired with delicious and authentic sauces and produce.
Stephen was formerly head chef at Vini, Surry Hills and learnt his craft in Italy where he spent a number of years working in restaurants, including under the tutelage of Michelin-starred chef, Salvatore Tassa.
To say Stephen is passionate about Italian food barely covers it. He credits his career to his grandparents, particularly his Nonna, with whom he recalls fondly making ‘dried sausage’ (they never called it salami) as a child in her cantina (in the basement). Stephen is passionate about creating the same sense of warmth and homeliness with his food, and is passionate and knowledgeable about regional Italian cuisine.
This class is all about immersing yourself in the simplest, hand-made food, created from excellent ingredients.
There are so many types of pasta, all typical of their region and they vary dramatically “from the cheese-and-butter-laden gnocchi of the mountainous north to the homegrown tomato-based sauces served with knobbly and twisted pasta of the sun-soaked south.” (Pasta Grannies, Vicky Bennison)
In this class you will learn:
the history of pasta and its versatility techniques for making a range of pasta shapes
basic recipes for fresh pasta and the importance of the best, simple ingredients
how to cook pasta perfectly and serve simply
building blocks of a good sauce, quality ingredients, soffritto
You will take home:
hand made pasta to cook at home
recipes and notes from Stephen for pasta and shapes
recipes for sauces, ideas and tips and tricks
During the class there will be coffee/tea and italian snacks and treats.
After learning and making pasta and sauces, the class will end with a feast of pasta at our long table with a glass of wine.
This class runs from 10am – 1pm.
For planning and purchasing, the cut off for this class booking will be Thursday 3rd November at 9:00am. We will endeavour to offer another class or add you to a waitlist.
