Join farmers Lachlan and Nicole Feggans as they share their regenerative farming journey. Nestled in a pocket of remnant Southern Highlands Rainforest, you will learn why the unique red basalt soil is so valuable. See the vibrant pastures, learn more about the daily routine, and understand the challenges, opportunities and strong possibilities of small-scale farming. And most importantly, taste their healthy pasture-raised eggs which are much better for you and the environment.
Nicole and her family value an ecological approach to land management and strive to leave their land in a better condition than when they found it. You will see what a proper free-range egg system looks like and why these ethical practices are essential for the animals, the landscape and ultimately, your food.
Applying holistic principles, including using animals as the ‘tools’ in the regenerative farming system, you will see how this helps rebuild topsoil, increases organic matter, draws-down carbon, and creates the environment that soil microbes love to live in. The cows and chickens share a beautiful relationship as they work together to spread fertility whilst providing high-quality pasture-raised produce. Practices like time-controlled grazing impact allow the soil to rest and regenerate after each rotation.
You will see their animals in a natural setting and how moving them constantly is why this system prevents overgrazing and allows regeneration to work.
Jamberoo Mountain Farm is a thriving, sustainable farm that supplies some of the Southern Highlands and South Coasts’ best restaurants, sells its produce at retailers such as IGA supermarkets and weekly farmers markets, and delivers fresh produce to the Moonacre’s Cafe and cooking school for our classes.

After the tour we will head over to the dam with trays of fresh eggs collected from the hens. Under the shade of the trees and surrounded by the sounds of this beautiful farm, Stephen Santucci from Moonacres Kitchen will turn those simple eggs into a feast of wholesome food. Sitting on bales of hay you will be immersed in the smells of an open fire and simply enjoy this demonstration of what is possible when cooking with eggs in nature.
Paired with local wines and Moonacres farm fresh produce the day will end with lunch.
Comfortable clothing, farm boots / gumboots are required, hat recommended as it’s a working farm with strict biosecurity.
Bus to collect group at the school at 10:30am and arrive at the farm by 10:45am. Back to the school at 2:30pm after lunch.
